Vanilla Bean Buttercream Recipe
We would like to introduce a wonderful yet easy-to-do Vanilla Bean Buttercream Recipe introduced by Amber Spiegel. The buttercream can be used to decorate cupcakes, cakes and other desserts. I have simplified the instructions a little bit but if you want the specifics, the video has instructions written on the screen for you to pause and follow.
Time : about 15 min
Ingredients : makes 18-24 cupcake toppings
- 4 large egg whites (save those yolks for bread pudding!)
- 1 cup sugar
- 3 sticks (1-1/2 cups) unsalted butter, softened
- 1 pinch salt
- 1/2 Vanilla Bean, scraped
Directions :
- Place egg white and sugar into a mixing bowl
- Bring a saucepan or bowl with about 2 cups of water to a simmer
- Heat the mixing bowl with the warm water
- Whisk until the sugar is dissolved – make sure the water in the sausepan does not boil
- Add butter and whisk on low speed until well blended
- Increase speed to medium for 3 min
- Slice vanilla bean and scrape out the seeds with the dull side of the knife
- Add vanilla beans and salt
- Keep whipping until fluffy
